Prof. Francesco Capozzi, University of Bologna, Italy
Francesco Capozzi is Full Professor of Chemistry at the Department of Agriculture and Food Sciences, and Director of the Interdepartmental Centre for Agrifood Industrial Research by Alma Mater Studiorum - University of Bologna. He is expert in nuclear magnetic resonance (NMR) and since 2009 is chairman of the "Foodomics International Conference" scientific committee.
His research activities, mainly based on Foodomics, aim to study food for optimized human health and well-being. To this end, its goal is to identify holistic descriptors, for both food and living beings, based on molecular profiles acquired by NMR spectroscopy.
