During the last 25 years Charles have been an active member of the cereal science / cereal chemistry area having published in excess of 200 refereed journal articles, books and conference papers. His focus has been on cereal science in particular the interactions between starch-protein-fibre in terms of the functionality of cereal ingredients and human nutrition. Since 2013 I have served as ICC national delegate for New Zealand, and is the president elect for ICC.
