Epameinondas Xanthakis

I am Senior Researcher in the department of Agrifood and Bioscience at RISE-Research Institutes of Sweden. My main focus research areas are related with innovative food freezing processes, heat treatments, and valorization of food chain side-streams. I have been granted with a Marie Skłodowska-Curie Individual Fellowship (EC) and I actively participate in several national and European research projects. The journey in the sub-zero world of frozen food as well as the interest for the impact of water phase transition on structure and quality of food matrices started in my previous placement at ONIRIS (Nantes) and is still active. I am involved in the research and development of innovative food processing technologies with great potentials such as the application of electrical and electromagnetic disturbances during food freezing. https://www.youtube.com/watch?v=0h-nVqePjYI
